Chocolate Peppermint Popcorn

  1. Air pop 8 cups of organic popcorn according to popper instructions. Set aside in a bowl.
  2. Pre-heat the oven the 275 degrees. Oil the cookie pan with coconut oil. Set aside.
  3. Over low heat, put ¼ cup of organic coconut oil in a pot. Add 2 tablespoon of organic cocoa powder. Stir until mixed well. Add in 1 tablespoon of raw cacao nibs.
  4. Add 80 peppermint marshmallow to the mixture. Stir until the marshmallows completely melt.
  5. Gradually add the popcorn to the pot. Stir until all the popcorn is coated.
  6. Spread the coated popcorn flat on the cookie sheet.
  7. Place the pan with the popcorn in the oven for 20 to 25 minutes until crisp. Allow the popcorn to cool for 15 minutes
  8. Serve and enjoy!
